Peas and Feta on Toast

Peas and Feta on Toast for one

________________ 
Gather:
-olive oil
-small onion, roughly chopped or thinly sliced
-1/4 cup fresh or frozen peas (or more if you like)
-1.5 oz feta, crumbled
-salt & pepper
-toast, toasted
-fried egg (optional)

Then:
-heat oil in a pan and sauté onion until edges are brown
-add in peas & stir for a minute or two until cooked. This doesn’t take long. Add a splash or two of red wine vinegar and stir in. Smash peas slightly.
-add the crumbled feta and mix. Cook for a minute. Add salt & pepper to taste.
-spoon pea mixture onto toast. Top with a fried egg, if using.
